Ingredients:

  • 3 tablespoons of honey
  • 4 tablespoons apple cider vinegar
  • Extra virgin olive oil
  • Salt

Preparation of the honey vinaigrette:

  1. In a mortar put the honey, apple cider vinegar, extra virgin olive oil and salt to taste.
  2. Mix everything, until the salt has dissolved and all the ingredients have been well integrated.

Orange vinaigrette

Ingredients:

  • The juice of an orange
  • 1 tablespoon balsamic vinegar of Modena
  • 4 tablespoons of extra virgin olive oil
  • Salt

Preparation of the orange vinaigrette:

  1. Cut the orange in half and extract all its juice by squeezing it well. Then grate the orange peel and reserve.
  2. Put the orange zest, the orange juice, the balsamic vinegar of Modena and the salt in a mortar.
  3. Mix everything well.
  4. Now add the extra virgin olive oil little by little while continuing to stir everything well.

Mustard vinaigrette

Ingredients:

  • 2 teaspoons light mustard
  • 3 tablespoons apple cider vinegar
  • 7 tablespoons of extra virgin olive oil
  • Black pepper
  • Salt

Making the mustard vinaigrette:

  1. Put the mustard, black pepper and salt in a mortar and mix well with the help of a fork.
  2. Add the apple cider vinegar little by little while you continue beating.
  3. Then do the same with the extra virgin olive oil.
  4. Keep beating until you have a well emulsified sauce.

Honey mustard vinaigrette

Ingredients:

  • 1 teaspoon light mustard
  • 2 teaspoons of honey
  • 2 tablespoons apple cider vinegar
  • 6 tablespoons of extra virgin olive oil
  • Black pepper
  • Salt

Preparation of the mustard and honey vinaigrette:

  1. Put the mustard, salt and black pepper in a mortar. With the help of a fork beat everything well, so that they mix and integrate perfectly.
  2. Add the apple cider vinegar and continue beating.
  3. Add the honey and mix well again with the help of the fork.
  4. Finally, pour in the extra virgin olive oil without stopping beating, until you get an emulsified sauce.
