Marquesas or marquisates are almond and icing sugar biscuits typical at Christmas. Discover how to make them at home with this Christmas marquise recipe.

What would Christmas be without its most typical, traditional and popular desserts and sweets? They are undoubtedly sweet recipes characteristic of these Christmas parties, whose recipes have passed from generation to generation for decades until our days.

And it is that although new and surprising proposals of ideal sweets for Christmas dinners and meals appear every year, there is no doubt that  traditional Christmas sweets continue to be the protagonists of these parties. There is no dessert that can compete against some shortbread, a portion of nougat from Jejuna or Alicante, or the popular Roscoe de Reyes.

The Christmas marchionesses become another good example of this. They are characterized by being spongy biscuits decorated on top with plenty of icing sugar, which are made from ground almonds.

Unlike other somewhat similar biscuits, such as muffins, marquises -or marquisates- are served in square, low-rise paper moulds, with a very mild almond flavor and tremendously fluffy.

However, if at any time you have dared to make them, or are thinking of doing it for this Christmas; you may have already noticed a problem: finding the square paper molds in which they are cooked, since it is not so easy give with them.

Marquesas or Christmas marquisates recipe

The recipe for marquisates that we propose on this occasion will give a total of approximately 13 to 16 marquisates.

It will take you about 15 minutes to prepare them , and approximately 13 minutes to cook them.

Ingredients:

  • 250 g of ground almonds
  • 40g of flour
  • 40g cornstarch
  • 4 eggs
  • 110g white sugar
  • 120 g icing sugar + icing sugar (to sprinkle on top)
  • the zest of a lemon
  • 1 teaspoon chemical yeast

How to make Christmas Marquesas:

  1. First of all we are going to proceed to preheat the oven to 180ºC of temperature.
  2. Wash the lemon well and grate it to obtain its skin. In a bowl, mix the lemon zest with the ground almonds and the 120 grams of icing sugar.
  3. Beat the eggs lightly and add them to the previous bowl. Also add the 110 grams of white sugar and mix everything well.
  4. In another large bowl, sift the flour with the yeast and cornstarch. Then add it little by little to the mixture in the previous bowl. It is important that you mix it little by little, until you get a thick and homogeneous mass.
  5. Arrange the capsules or square paper molds on a baking tray and spread the dough over them without reaching the edge.
  6. Put the tray in the oven and bake for 12 or 13 minutes.
  7. After this time, when they are ready, remove them from the oven and let them cool. To finish, sprinkle plenty of icing sugar on top.
