Who has not tried a wonderful pancake on occasion? Also known by the names of pancaque or pancake, it consists of, as you will surely know, a flat and round shaped bread, generally sweet, traditionally made with milk, flour, eggs, butter, yeast, sugar and a pinch of salt. It is also common to make them by adding some spice or essence, especially highlighting the presence of cinnamon as a flavoring agent.
In fact, depending on the country where we are, they tend to be accompanied by one or another ingredient. Thus, for example, in the United States and Canada pancakes coated with maple syrup are common, while in our country it is more common to consume them with cream or jam.
It is usually confused with crepes, although in reality the pancakes are characterized by having a smaller diameter, they are made with yeast and they are also cooked over medium heat until they are completely browned.
They are ideal to eat at any time of the day, and although they are commonly considered a sugary dessert, the truth is that they can become a healthy and nutritious dish, ideal for breakfast, especially when they are made with more natural ingredients and we avoid the use of sugar as a sweetener.

Oatmeal pancakes recipe
Ingredients you need:
- 50 grams oatmeal
- 6 egg whites
- Agave syrup (to taste)
- Ground cinnamon
- Extra virgin olive oil
- As an accompaniment: fresh natural fruit, honey, fruit jam or agave syrup.
Preparation of the oatmeal pancakes:
First put the sifted oatmeal in a large bowl. Separate the egg yolks from the whites and beat the whites a little in a separate bowl. Add the beaten egg whites to the bowl of sifted oatmeal. Add a little agave syrup to sweeten and mix everything well, beating carefully.
While you prepare the mixture, put a few drops of extra virgin olive oil in a pan (to prevent them from sticking when cooking), and put the pan over medium heat.
When the pan is hot, pour the mixture to form pancakes. Wait a few minutes until it is done and browned on one side, to turn it carefully with the help of a spatula, and let it cook on the other side. Then carefully place each pancake on a large plate. Repeat the same operation until you have made all the pancakes.
When serving them you can add a little fruit on top, honey, your favorite natural fruit jam or a little more of the same agave syrup.
