Ingredients

  • 1 kg of fresh tomatoes
  • 1 onion
  • 1 clove garlic
  • 1 handful of aromatic herbs (rosemary, basil, parsley and oregano)
  • Extra virgin olive oil

Preparation of homemade tomato puree

  1. Wash the tomatoes well. Remove the upper part and cut them into several pieces with the help of a sharp knife. Reserve them.
  2. Peel the onion and garlic clove. Finely chop the onion and the garlic clove cut into thin slices.
  3. Put extra virgin olive oil in a frying pan and lightly fry both the onion and the garlic clove.
  4. When the onion is transparent add the cut tomatoes and cook over medium heat for 30 minutes, or until the tomato is very soft.
  5. Once the tomato is cooked, add aromatic herbs to taste and mix well with the help of a wooden spoon.
  6. To finish, put the hot tomato sauce in the blender glass -or pass it through the Chinese one- and grind everything very well, until the tomato has been crushed and integrated perfectly.

  9. In addition to our classic proposal of homemade tomato puree, we also usually make another excellent and wonderful option at home: it consists of adding red peppers, which makes the puree become somewhat smoother in flavor, and its color is slightly more pink. Do you dare to try it?

Elaboration

  1. Wash the tomatoes and red peppers well. Remove the tops of the tomatoes. Cut the peppers in half, also remove the top and its internal seeds. Cut both the tomatoes and the peppers into several pieces. Reserve them.
  2. Peel the onion and garlic clove. Now finely chop the onion and garlic clove. Add extra virgin olive oil to a frying pan and lightly fry the onion and garlic clove.
  3. When the onion has turned transparent add the cut tomatoes and red peppers, and cook over medium heat for 30 minutes, or until both vegetables are very soft.
  4. Once the tomato and peppers are cooked, add aromatic herbs to taste and mix well.
  5. To finish, put the tomato and pepper sauce still hot in the blender glass and blend everything very well, until the two ingredients have been crushed and integrated perfectly.
  6. Ready! It is advisable to serve quickly while still hot.
