Basic oatmeal cookie recipe
Ingredients:
- 230 grams fine oat flakes
- 100 grams oatmeal
- 150 grams brown sugar
- 2 eggs
- 150ml Of olive oil
- 1/2 teaspoon chemical yeast
Preparation of the basic oatmeal cookies:
- In a large bowl or the bowl of the food processor put the oat flakes, flour, brown sugar and yeast. Mix everything well a bit.
- In another bowl mix the eggs and olive oil. When these two ingredients are well mixed, add it to the previous mixture.
- Now mix everything well. If you use a food processor, mix well for a few minutes. If you do it by hand, stir well until a paste forms.
- Preheat the oven to 170ºC and put parchment paper on the baking tray.
- With the help of your hands, form balls and then flatten them. Place them one by one on the tray.
- When you have finished with the first batch, cook them in the oven for 10 minutes, or until you notice that the cookies are golden.
- Take the cookies out of the oven and place them on a wire rack to breathe and cool.
Oatmeal Raisin Cookies Recipe
Ingredients:
- 60 grams of oat flakes
- 60 grams chopped raisins
- 225 grams Of flour
- 225 grams soft butter
- 140 grams brown sugar
- 1 egg yolk
- 125ml of orange juice
Preparation of the oatmeal raisin cookies:
- Chop the raisins and reserve them in a bowl. Cut the orange in half and squeeze it to obtain 125 ml. of its juice, which you must add to the bowl of raisins. Now let them soak for 10 minutes.
- Melt the butter a little in the microwave and put it in a bowl together with the sugar. Mix them well with the help of a wooden spoon.
- Beat the egg yolk a little and add it to the butter and sugar mixture, stirring again. Sift the flour over this mixture.
- Add the oat flakes and mix again.
- Now drain the raisins that you have soaked in the orange juice and add them to the mixture. Stir well until you get a homogeneous paste.
- Preheat the oven to 190ºC and line two baking trays with baking paper.
- Take portions with your hands, first forming balls and then flattening them, and place them on the trays leaving a distance between them.
- To finish, bake the cookies for 15 minutes, or until golden brown. Then remove them from the band with the help of a spatula and let them cool.
