Puff pastry braid stuffed with angel hair
Angel hair candy is a jam that is made with sugar and swamp squash, cider squash or boba squash as it is also known.
It is widely used to fill cakes, tarts, and although we see it throughout the year, it is on these dates when it also gains prominence as part of many cakes that are made during these Christmas dates.
The angel hair braid is very easy to do and takes very little time to prepare.
We can make angel hair candy at home or use the already prepared industrial angel hair candy that we can get in the market.
Ingredients for 6 people:
- A sheet of thawed puff pastry.

- A beaten egg yolk to brush the puff pastry.
- Icing sugar to decorate the braids.
Elaboration of the angel hair braid:
- We start by defrosting the puff pastry at room temperature.
- We are putting the oven to preheat with a temperature of 180ºC for 15 minutes.
- We spread the puff pastry on the counter and mark a little, with the tip of the knife, being careful not to cut, just mark along 3 equal parts. We do not touch the central part.
- The lateral parts or ends will be cut diagonally towards the center.
- We cut the two equal ends diagonally towards the center to later be able to form and knot the braid. In the central part of the puff pastry we put the angel hair and spread it well.
- Next, we are taking the strips of dough, one on each side, and joining them to form the braid.
- Once we have it formed, brush the puff pastry with the beaten yolk and a brush. Sprinkle the icing sugar on top of the braid.
- Put the braid in the oven and cook at a temperature of 180ºC for half an hour, until golden brown.
