Green tea is a variety of tea that is as popular as it is consumed in the world. It consists of a natural drink that is obtained by cooking the leaves of the Camellia Sinensis plant, but unlike other varieties of tea, it has had minimal oxidation during processing. In fact, as is the case with black tea, green tea has not been fermented since its leaves are collected fresh, then subjected to a roasting process, pressed, rolled, crushed and dried.
In the case of green tea, it is a variety of tea whose drink is ancient, whose benefits were already known many centuries ago. In fact, in the year 1211 the Buddhist monk Eisei wrote that “tea has an extraordinary power to prolong life”, and he did so in his book Maintaining health by drinking tea, whose title is ultimately nothing but an example that already at that time its most important properties and qualities were known.
Among these benefits we can especially mention its great antioxidant power as it is rich in polyphenols (especially catechins), which help reduce the negative action of free radicals. It is a useful drink to prevent arteriosclerosis and reduce the risk of cardiovascular diseases, being very suitable for lowering high levels of fats in the blood (both LDL cholesterol and triglycerides).

In fact, for its preparation we will use the wonderful and exquisite Matcha tea, as it is one of the softest and most used in the preparation of desserts.
Green tea ice cream recipe
Ingredients you need
- 1/2 liter of milk cream
- 1/2 liter of whole milk
- 6 egg yolks
- 5 tablespoons of Matcha tea
- 130 grams of whole cane brown sugar
Steps to prepare green tea ice cream
Heat a saucepan over low heat and heat the milk a little along with the Matcha green tea until it reaches the boiling point. When it starts to boil, turn off the heat, set aside and let stand for 8 minutes, stirring the mixture well from time to time so that the milk acquires all the flavors that the tea provides.
Meanwhile, separate the egg yolks from the white. In a container or saucepan suitable for heating in a bain-marie, mix the egg yolks with the sugar, beating well until you get a homogeneous cream. Now add the milk.
Heat everything in a bain-marie, over low heat, stirring constantly with a wooden spoon. When the mixture begins to thicken, continue stirring for a few more minutes.
After these minutes remove from heat and let cool. It is time to add the milk cream, mixing well. Now put the mixture in a metal container, and put it in the freezer for 2 to 3 hours.
After this time, remove the ice cream from the container and beat it well until creamy. Put it in the freezer and after a few hours repeat the process again until you reach the third batch, at which time you will cover the ice cream with kitchen film and finally reserve it in the freezer until consumption.
