- Once it boils, we turn off the fire. We let the flavored milk rest until it is warm.
- We remove the cinnamon sticks and put the flavored milk in a wide container that allows us to soak the slices of bread.
- We put all the slices of bread soaked in the milk and we reserve it in the fridge for an hour.
- In a frying pan we put plenty of oil to heat to fry the torrijas.
- While we beat the eggs. Carefully we are removing the bread from the milk, we are passing it through the beaten egg and we are frying them with medium heat.

- We cover a tray or plate with absorbent paper to put the fried French toast and drain the oil.
- When the torrijas are warm we are slicing them by the mixture of sugar and cinnamon.
- We can also sprinkle them with a little icing sugar.
The torrijas can be accompanied with a little honey or light sugar syrup.

Eggless French toast
Ideal recipe for people who are allergic to eggs or for people who follow a vegan diet.
In this recipe, the torrijas are of course not sliced in egg as we do with the classic torrijas, nor are they fried in abundant oil; they are grilled just by smearing a little oil on the bottom and sides of the pan.
Ingredients:
- 300 grams of bread from the day before cut into thick slices.
- One liter of whole or skimmed milk.
- 2 cinnamon sticks.
- The grated skin of an orange and a lemon.
- 150 grams of sugar.
- A little bit of sunflower oil or mild-flavored virgin olive oil.
- Icing sugar to sprinkle and present the French toast.
- Honey to accompany the torrijas.
Elaboration:
- Inside a warmer or saucepan we put the milk, the lemon and orange zest, the sugar, the cinnamon sticks.
- We put on the fire, stir everything well and heat with medium heat until it starts to boil. Once it boils, we turn off the heat and let it rest until the milk is warm.
- Remove the cinnamon sticks and add the slices of bread to the milk. We reserve the bread to soak in the flavored milk for at least an hour and in the fridge.
- After time we take the soaking bread out of the fridge. Put a little oil in a pan and spread the bottom and sides of the pan well.
- We put it on the fire to heat and when it is very hot we put the torrijas inside to go grilling or roasting them, browning them well on both sides.
- Once they are well browned, we are putting them on a tray or plate.
When tasting the torrijas we can accompany them with a little honey on top or sugar syrup or with a mixture of sugar and cinnamon sprinkled on top.
