Homemade Bread Pudding Recipe
Ingredients:
- 600 grams of bread
- 1 liter of milk
- 500 grams of sugar + 150 gr. of sugar
- 4 eggs + 5 yolks
- 80 grams canned fruit
- 1.5 dl of water
- 1 cinnamon stick
- 3 cloves
- 1 handful of raisins
Steps to make bread pudding:
- One day before making the bread pudding, crumble the bread and place it in a large bowl. Add the liter of milk and let it soak for 24 hours.
- After the day put in a casserole 500 gr. of sugar, the water, the cinnamon stick and the 3 cloves and let it boil for about 1 minute. Remove the syrup from the heat and set aside until it cools down a bit.
- Mix the 4 eggs with 5 yolks and then wrap the syrup with the spices, stirring constantly.
- Strain the mixture with the help of a strainer and add it to the bread.
- Add the canned fruit.
- Meanwhile, put the remaining sugar (the 150 grams of sugar) in a saucepan with a few drops of water and let it boil until it forms a kind of light-colored caramel. When it’s ready, pour it into a special pudding mould.
- Pour the entire mixture into the pudding and add a handful of raisins on top.
- Bake in a bain-marie at 180ºC for 1 hour and 30 minutes.
- After this time, when it is ready, set it aside, letting it cool down a bit and unmold it.
