Ingredients:
- 500 grams of sugar.
- 500 grams of ground almonds.

- 50ml of water.

Preparation of the marzipan:
- In a saucepan or heater we put the water and sugar to cook with high heat, to make the syrup.
- Add the teaspoon of cinnamon and the grated skin of the lemon.
- We stir frequently until we achieve a clear syrup, which does not darken.
- In a bowl, put the ground almonds and add the syrup.
- Mix well and let the dough cool down.
- Once the dough has cooled, we take small portions of dough and work it, spreading it well.
- We are making figures giving it the shape we want.
- We put baking paper on the oven tray and we are putting the figures on the tray.
- Once all the figurines are placed in the tray, we will let them rest for about 24 hours.
- With this rest we will get a crust to form that will protect the marzipan figurines from breaking while they are baking.
- We separate the white from the yolk.
- We beat the yolk well and with the help of a brush we brush the figures.
- Preheat the oven to a temperature of 180ºC for about 10 minutes.
- After 10 minutes, we put the tray in the oven and raise the temperature to 200ºC to bake the marzipan figures for approximately 3 minutes or until they are golden brown.
