Marzipan is a traditional sweet these Christmas dates. The origin of marzipan is not entirely clear, although it is believed that the Arabs introduced it to Spain. The first writing that exists in Spain and in which marzipan is mentioned is from the year 1577 in Toledo.

Christmas marzipan recipe

Ingredients:

  • 500 grams of sugar.
  • 500 grams of ground almonds.
  • The grated skin of a lemon.
  • Half a teaspoon of cinnamon.
  • 50ml of water.
  • An egg (to paint the dough).

Preparation of the marzipan:

  1. In a saucepan or heater we put the water and sugar to cook with high heat, to make the syrup.
  2. Add the teaspoon of cinnamon and the grated skin of the lemon.
  3. We stir frequently until we achieve a clear syrup, which does not darken.
  4. In a bowl, put the ground almonds and add the syrup.
  5. Mix well and let the dough cool down.
  6. Once the dough has cooled, we take small portions of dough and work it, spreading it well.
  7. We are making figures giving it the shape we want.
  8. We put baking paper on the oven tray and we are putting the figures on the tray.
  9. Once all the figurines are placed in the tray, we will let them rest for about 24 hours.
  10. With this rest we will get a crust to form that will protect the marzipan figurines from breaking while they are baking.
  11. We separate the white from the yolk.
  12. We beat the yolk well and with the help of a brush we brush the figures.
  13. Preheat the oven to a temperature of 180ºC for about 10 minutes.
  14. After 10 minutes, we put the tray in the oven and raise the temperature to 200ºC to bake the marzipan figures for approximately 3 minutes or until they are golden brown.
  15. We must be careful because they brown quickly.
  16. Once they are golden.
  17. Carefully remove the tray from the oven and let the figurines cool.
