The flour pancakes or Carnival pancakes as they are also known are traditional sweets in the confectionery of the Canary Islands on the dates in which we are enjoying these festivities.
The tradition of making these pancakes is to taste them on Shrove Tuesday, when family and friends get together and have a snack of these delicious and warm flour pancakes.
We can simply prepare the pancakes with flour, or by adding ingredients such as banana, pumpkin, and sweet potato, to make them somewhat more nutritious and with a very rich flavor.
Pancakes are a sweet that everyone in the house usually likes, especially the little ones.
They are easy to make, we can even prepare the pancakes involving the little ones in the house and spend a fun and enjoyable afternoon with the children.
The pancakes, in addition to having flour, have other ingredients such as milk, eggs, sugar, the grated skin of a lemon or orange, and to give it a touch of flavor a little cinnamon, anise grains (matalahúga) or a dash of anise.
We prepare dough with all these ingredients and then we can fry them or make them in the oven.
At the time of presenting them, we will decorate them with a little icing sugar on top.
Then we can accompany them with cinnamon syrup on top, as is the case with this recipe, or a drizzle of honey.
How to make pancakes with cinnamon syrup:
As you can see below, the pancakes have simple ingredients and that we will easily get most of them we usually have at home.
Ingredients:
- 400 grams of sifted pastry flour, (flour with yeast already incorporated).
- 500 ml. whole or skimmed milk.
- 6 eggs.
- 250 grams of sugar.
- A teaspoon of cinnamon powder.
- The zest of a lemon or an orange.
- A teaspoon of anise grains, (matalahuga).
- A splash of anise.
- Mild flavored olive oil or sunflower oil (for frying).
- Icing sugar to decorate.
- Cinnamon syrup to accompany the pancakes.
Ingredients for the cinnamon syrup:
- A stick of cinnamon.
- 100 grams of sugar.
- The same amount of water.
Preparation of the syrup:
- In a small saucepan or heater we put the sugar to the fire to cook with minimum fire.
- Add the water, the cinnamon stick and cook over low heat without stopping stirring until it starts to boil.
- When the syrup is ready, turn off the heat, remove the cinnamon stick.
- Reserve the syrup in a small sauce boat or bowl to make the dough for the pancakes.
Preparation of pancakes with cinnamon syrup:
- In a bowl, crack the eggs one by one and beat them well.
- Once they have gained volume, add the flour little by little, the sugar, the ground cinnamon, the milk, the lemon or orange zest, the anise grains, the dash of anise and stir to mix well and form the dough of the Pancakes.
- The dough for the pancakes should have a somewhat thick consistency, if it were to be light, add a little more flour.
- Heat a large amount of oil in a frying pan.
- Once the oil is very hot, we fry the pancakes.
- With a large spoon we are taking portions of dough and frying them in the oil.
- Brown the pancakes on both sides.
- Put the pancakes on a tray or plate on a napkin or absorbent paper so that the excess oil drains off.
- Serve the pancakes warm with icing sugar sprinkled on top.
At the time of tasting them we will put a thread of cinnamon syrup on top.
