Spring and summer call for rich and delicious fruit desserts. They are delicious options not only for their refreshing flavor, thus becoming wonderful dishes with which to mitigate the heat of this time of year, but also for the combination of textures and flavors that we can use.

Here are some suggestions so you can prepare sweet and healthy desserts.

Orange Bavarian

The bavaroise or bavarois is a dessert also known by the name of Bavarian cream, and which consists of a classic cold dessert that usually has whipped cream, gelatin and English cream. This time we propose a completely different recipe.

Ingredients

  • 3 eggs and 1 more egg white
  • 200 grams of sugar
  • 4 thin fishtail leaves
  • 1 glass of cointreau liqueur
  • Orange juice to complete the ¼ liter with the liquor
  • 4 tablespoons of water
  • 2 tablespoons of fine oil

Step by step recipe

  1. In a glass bowl, separate the yolks and add the sugar, stir with a wooden spoon for about 5 minutes until creamy.
  2. In a small saucepan, put the fishtail cut into small pieces and soak them in 4 tablespoons of water; if it doesn’t melt well, you can heat it up a bit to melt it, but don’t cook it.
  3. In the bowl that has the yolks and the sugar, add the ¼ of the liquid between Cointreau and the strained orange juice, and add the fishtail little by little, stirring constantly.
  4. Separately, the egg whites are mounted and gradually added to the cream. Mix very well, so that there are no lumps of egg white left unincorporated.
  5. Pour the cream into a flanea and place it in the fridge, very cold, until it sets. It is prepared at least 6 hours in advance.
  6. It can be decorated with a little whipped cream or some thin slices of orange.

Red fruit soup with chocolate ice cream

The truth is that chocolate combines almost perfectly with any acid flavor, as is the case with red fruits. And, precisely, on this occasion we invite you to prepare this wonderful combination.

Ingredients

  • For the chocolate ice cream
  • 125 grams of chocolate
  • ½ glass of water
  • 1 tablespoon of sugar
  • 3 egg yolks
  • 1 tablespoon sugared vanilla
  • 250 grams of whipped cream

Ingredients for the red fruit soup

  • 1 kilo of red fruits: raspberries, currants, strawberries…
  • 70 ml of orange juice
  • 100 grams of sugar

Step by step recipe

How to make the ice cream:

  1. Put the broken chocolate into pieces with the water, the sugar and the sweetened vanilla in a saucepan.
  2. Heat over low heat until it dissolves and stirs very well with a wooden spoon until you obtain a thick liquid. Let it cook for just a few seconds.
  3. In a salad bowl we put the yolks, they are lightly beaten and then they are mixed with what we have put in the saucepan.
  4. When this mixture is completely cold, add the whipped cream so that it is well incorporated.
  5. Pour this mixture into a mold and put it in the freezer. There it should rest for about 3 hours.

How to make the soup:

  1. Put the orange juice together with the sugar in a saucepan to cook until obtaining syrup to the thread point.
  2. Let it cool down. Put the red fruits through the blender, reserving some to decorate, add the syrup and let it cool.
  3. Place the soup in a deep plate, put the chocolate ice cream in the center and decorate with the red fruits.

 Pineapple and apricot salad with tiles

If there is a refreshing fruit that can become a wonderful friend on the hottest days of spring or summer, the pineapple stands out above many others. We advise you to try this wonderful combination with apricot. If you wish, you can also add some orange segments.

Ingredients

  • 8 apricots
  • 4 slices of fresh pineapple
  • 100 grams of powdered sugar
  • 1 teaspoon dried lavender
  • 25 c of water

For the tiles

  • 100 grams of butter
  • 100 grams of powdered sugar
  • 100 grams of brown sugar
  • 10 c of orange juice
  • 75 grams of flour

Step by step recipe

  1. Put the sugar together with the water to boil in a saucepan for 5 minutes and then add the lavender. Remove from heat and leave to infuse.
  2. Clean and cut the fruits into quarters. Put them in a salad bowl and pour the previously filtered lavender-scented syrup over it. Put it in a cool place 2-3 hours.

For the tiles

  1. Mix the two types of sugar, the flour, the orange juice and the melted butter in a salad bowl. Beat and let it rest for 15 minutes in a cool place.
  2. Preheat the oven to 180ºC. With a spoon, distribute the dough of the tile on the oven plate and then put it in the oven. With the heat, the tiles will take a rounded shape. As soon as they begin to take color, remove the plate from the oven.
  3. Let it sit for 3 minutes and carefully peel off the tiles with the help of a knife.
  4. Let them harden; then serve with the very fresh apricot and peach salad.
